Mouselab was an early tool which I and coauthors developed to understand decision-making by observing information acquisition.  While it looks quite ancient in its DOS based interface, it has been requested by hundreds of researchers and used in many papers.  

Much of the research is summarized in the book The Adaptive Decision-Maker
